Safe and Cheesy Mac N’ Cheese

Everyone has their favorite mac and cheese recipe. But if you want your dish to be the talk of all parties, here are three reasons why you should try ours. First, all of the ingredients are peanut and tree nut free, we must keep our family and friends safe! Second, the crushed up “Safe + Fair” Sweet Sriracha Popcorn Quinoa Chips adds an extra texture and flavor to get that satisfying crunch that we all desire. Third, it uses a combination of different cheeses, creating a rich and creamy sauce, for the ultimate mouth drooling experience! This year at Thanksgiving everyone will be begging you for this recipe. You can use my favorite cheeses listed in the recipe or switch it up and use your own personal favorites. You can never go wrong with baked noodles and cheese.

Ingredients:

6 Slices of Bacon (optional)

2 “Safe + Fair” Mac N Cheese Bags

1 Tbsp Butter

Cheese Sauce: 

1 1/2 c. Heavy Cream

3/4 c. Cream Cheese

1/2 c. Gouda Cheese

1/2 c. Havarti Cheese

1/2 c. Asiago Cheese

1/4 c. Brie Cheese

1/4 c. Shaved Parmesan Cheese

1/4 c. Mozzarella Cheese

1/2 tsp Nutmeg

1/2 tsp Ground Rosemary

1/2 tsp Black Pepper

1/4 tsp Truffle Oil (Optional)

1/4 c. Sour Cream

Topping:

1/2 c. “Safe + Fair” Sweet Sriracha Popcorn Quinoa Chips, Blended/Crushed to resemble “bread crumbs”

1/4 c. Shaved Parmesan Cheese

Directions:

  1. (Optional Step) Preheat oven to bake at 350º. Line a baking sheet with foil, and top with the bacon. Cook bacon until crispy on both sides, let cool. Once cool, chop into bite size pieces. Set aside. (Keep the oven on for baking the Mac N’ Cheese)
  2. In a large pot boil 12 cups of water, once boiling reduce to medium heat. Add both packages of noodles to the boiling water. Stir constantly for 7-8 minutes, or until pasta is cooked to al dente. Drain noodles, and place into pan that is oven safe.
  3. Coat the hot noodles with butter, set aside.
  4. For the cheese sauce: in large pot bring heavy cream to just a boil, reduce heat to medium. Add both of the “Safe + Fair” real cheese packets, the remaining cheeses, nutmeg, rosemary, pepper, and truffle oil (optional). With a wooden spoon stir until melted together. Sauce should coat the back of the spoon.
  5. Take cheese off the heat, and add the sour cream.
  6. Mix the cheese sauce into the prepared cooked noodles, until well combined.
  7. (Optional) Mix in half the bacon bites.
  8. Top with remaining bacon bites (optional) and add the blended/crushed up  “Safe + Fair” Sweet Sriracha Popcorn Quinoa Chips, then add the shredded parmesan cheese on top of that.
  9. Bake for 20 minutes, for the last few minutes turn your oven to broil, this will help to crisp up the top to a golden brown. But make sure you keep your eye on it, it will toast fast!
  10. Plate into ramekins or bowls. Share it or eat it all while it’s hot!
